Ham maturation is favoured by the particular microclimate of Langhirano. It is the Parma torrent flowing through the valley surrounding the town which favours the flow of air coming from the Ligurian Sea, thus keeping the percentage of humidity fairly low. The air enters through the numerous maturation store-room windows and absorbs the moisture which filters through from the muscle mass to the surface of the ham. The ability of the Master Maturers consists in knowing how to best air the store rooms according to the atmospheric conditions. It is this experience which gives Bedogni ham its fragrance, taste and unmistakeable mildness.
